When travelling with Niugini Diving you get more than a taste of
the exotic with traditional foods and the bounty of the sea. Some
of the exotic vegetables which are a part of local cuisine throughout
the Papua New Guinea islands are ibica, taro, and kaukau (sweet
potato). Typical local meats are fish, chicken and hunted animals.
For those of you who would like to try these delights, we encourage
you to do so. We take you into a village and introducing you to
the village way of life, explaining the different types of food
and how they are prepared. A typical display of food features locally
caught fresh fish, either smoked or cooked in coconut cream, along
with either pork or chicken. Local vegetables accompany the meat...a
selection of taro, kaukau, snake beans, pumpkin tops, ibica, tulip,
pitpit and yams.
